one of my favorite holdiday foods is green bean casserole , this is a vegan variation ive made several timed fried onion topping 1 white onion sliced small 1 c plain soy/almond milk 1 T white vinegar 1 c flour (gluten free flour works great too) salt, pepper, garlic salt to taste add vinegar to milk, then submerge onion slices and soak for 20 min remove from milk and drain excess add seasoning to flour and stir Dredge onion slices and add to flour mixture, remove and shake off excess green beans 1 lb fresh green beans 1 T flour 1 T earths balance or other vegan margarine 2-3 c almond/ soy milk 1 t soy sauce or liquid aminos salt and pepper blanch green beans until bright green and crisp, remove from water and put in ice bath to stop cooking, set aside heat margarine in a skillet, add flour and stir until brown, add milk slowly while wisking add soy sauce and seasoning, then stir in green beans. top with fried onions and bake at 350 degrees for 15-20 min or until thickened

m1-banana, toast m2-eggplant cutlets with elbow mac and marinara m3-spicy thai noodles, egg roll h2o- about 110 oz exercise-treadmill/rowing/stationary bike my healthy choice for the whole week was adopting a plant based diet, which i had previously done for about 6 months. i was grumpy because i wanted different food, but i felt much better physically and am finally seeing changes in my body this week!

skipped breakfast 😔 lunch was a chicken aloha salad dinner was chicken and soup water wasnt great again, maybe 70 oz biked 5 miles on the stationary, then did a set of pushups, ab roller and air squats on the bosu 👍🏼
